Hi NCGirl, As far as I know, you have to freeze rice, flour, etc, any grain, for 2 weeks to kill all the larve that may be lurking in with the food so that they don't appear as "teenagers" having a party in your stash several months down the road making your goods, no good. From what I've read, keeping food in the freezer is never a bad thing because the lower the temp the more of the original nutrition in the food is retained. This is especially important in trying times. You are very lucky to have a big freezer to fill. Leave all grains in there if you can just be sure to label it well and seal it up well.  The biggest enemies of food storage are light, heat, air, time and I'll throw in fat content as well because the higher the fat content the quicker it goes rancid. Also, food in the freezer is safer from outside pests like mice and ants and other creepy crawlies.

Good Luck!
