I received this in an email today. It struck close at home with me.
Last weekend my husband grabbed a bird flu supply box of instant pancakes.
The product had expired, but looked just fine.
 
He cooked the pancakes (Mothers day treat) and served these rubbery looking flap jacks. We both sat down, I even buttered mine, something touched us and we decided to go out to the local diner and tossed the pancakes. Now I received this email that is verified by Snoopes.com.
 
We really need to stay on top of rotating our goods and keeping an eye on those expiration dates. We saw a slight difference in texture of the dry product and the finished product. I'm just glad we did NOT consume any of the product, especially after reading this.

Does anyone know why pancake mix in particular would have this effect? Is there a particular ingredient? What other mixes would have this effect?
