Has anyone tried Ghee?  It's a form of shelf stable clarified butter.   It's common to India.  The butter is heated and the clarified portion is skimmed off with a spoon and left to cool.  There are no solids in the ghee, just the fatty part of the butter.  It's semisolid at room temp, and a hard solid in the frig.  Supposedly you can leave it at room temp after opening so long as you use a clean utensil everytime you enter the jar.  If you contaminate it with toast crumbs or whatnot, you should refrigerate it.  I guess if you're creative you could try to reconstitute the butter by adding butter solids such as Molly McButter, or dehydrated butter.  I found this in a King Arthur Flour catalog.  You can also find it by searching the net under Ghee.  Tastes like butter to me.   I'm too chicken to try to can butter myself.

Hi, I have several recipes in some of my cookbooks (health and more exotic ones), in which ghee is used, but have never tried it.
Are you making this and storing this for butter in a pandemic/crisis, BobFMB? I haven't canned butter either, but I ordered some canned butter from the internet grocer.

There has been a thread here before about ghee, called Ghee?? at http://avianflutalk.com/forum_posts.asp?TID=3368 in case you want to read that too.

I'm storing for butter in pandemic/crisis.  I ordered six 16oz jars, and have put them away with the rest of my bird flu supplies.  I tried to order butter from internet-grocer but they have been out of stock since April of 2006, and dont expect new shipments due to a problem w import regulations.  Glad you were able to get the canned butter in time.  I'll get some too if it comes back on market.

I was browsing thru a large Asian market in my area today and came across some canned butter. It  was $2.49 for 7.05 oz.  It is imported for Brazil. The company on the can is brexamerica.com. I looked at their site and they do have the butter there, but I have no idea the cost or anything. Just  thought maybe others could use this info if they don't have access to purchasing canned butter locally. WOO HOO I found the butter  and the canned cheese today.  Thumbs Up

I get mine at the local Indian food store...lots of choices and sizes. I have also "canned" butter and it was easy and much less expensive than buying ghee. t

I just got a case of canned butter from New Zealand at www.mredpot.com - great price and it showed up 2 days later.  They also have canned cheese, but I haven't tried that yet.  Much better than trying to cann butter yourself!!
