I have gotten some messages asking about canning of bacon grease, so i thought i would put it on a topic. This is the same for lard.
Clean your jars well (i wash with soap water and a bit of bleach)
Put clean jars into a 250 oven for 20 mins
Heat lids as normal
Fry the bacon and heat the grease til the water is out of the grease...it becomes clear. Do not get to the "smoking" stage.
A pound of bacon will do about 1/2 pint
Pour the hot grease into the hot jar
Fill the jar to about 1/4 inch of the top
Put on the heated lids
Check for the seal and store in a cool dark place
