I recently bought a cheapy (single temperature setting) American Harvest food dehydratorand have enjoyed experimenting with various fruits and vegetables.
Has anyone dried bananas? I cut the bananas up into long strips and dehydrated them for several hours. How pliable are dried bananas supposed to be? Mine are very pliable and the bananas are "soft" when I chew on them. So now I'm wondering if they will become moldy in storage.
Should I have dried the bananas for a longer period of time and how do I know when the bananas are sufficiently dried? Are they supposed to be brittle?

Hi Irene,
While I've not tried drying them myself, I purchased a bag of dehydrated banana chips and they are not pliable. They are brittle enough to have several broken in half in the bag.

I've dried plenty of bananas. They should snap when you break them apart. Take one or two out when you think they are done, let them cool and then see if they snap. Also instead of doing them in long strips you might find rounds of about 1/8 to a 1/4 inch thick are nice. I love my American Harvester. I have a temperature dial and I got it at Walmart for about $35.00. I love doing tomatoes, too.

irene,
most dried fruit is called leather. i will try to find a site that i recently found and send it to you. drying is done at a certain optimal temperature range.
you have done well to get that dryer. there are much more expensive devices. in the end you have the same thing.

The dried banana chips are dipped in a sugar solution are fried not dried. I saw it on a food channel show. I dried bananas really dry (not pliable) and put them in a barely warm oven until really dry. I store them in a glass jar vaccu sealed.

So far I have dryed tomatos,potatos(blanch them first Google it)and burger meat, after I cooked it. then I vacum sealed them Happy cooking

can you dry cheese? can you boil eggs and dry them? optimal temp for dryed meat 160 degrees? we need to learn.

you can dry in an oven. Put it on 150-160. put food slices on a pan. dont let the slices touch or overlap. prop the oven door open with a wooden spoon or something. this will work. it will require a lot more electricity than
a food dehydrator.
