taking the meat of minks, foxes and raccoon dogs whose pelts have been

removed, and passing them off as other meat products to sell in the

foodstuffs market. At Huanan Seafood Market, suspected as having been

the source of novel coronavirus, the meat of fox and mink or live mink

has been found on the menu of the wildlife restaurant..."

the Chinese Academy of Engineering produced a project entitled

'Research Report on China Wild Animal Husbandry Strategy for Continued

Development' (2017), stating that China annually has several tens of

millions of animal carcasses from pelt production, and at the peak of

production in 2015 had up to about 95 million carcasses from mink,

fox, and raccoon dog pelt, at a total of about 1.24 million tons.

These carcasses can be purchased by itinerant traders. Some convert

the meat and bones to feed, while a large quantity enters the market

as other meat products for the dining table. Since they aren't

inspected for disease, they can easily cause food safety problems..."

The economic U-turn by China from supporting the wildlife farms (as a way of dealing with rural poverty) to closing them down is a compelling argument (although not actual 'proof').   


Once the 'cat was out of the bag'* the Chinese government has acted with strong measures that are not justified by the data they have released.  The government seems to be pragmatic, so in this case actions speak louder than the official data.
