What do you do with beans/lugumes?

I know I'm suppose to be buying beans/lugumes by What do you do with them...I get split peas and lentals but what do you do was all the other beans Im suppose to be buying?
 
I don't cook with beans.  I need some help here...Recipes would be greatly appriciated...

Lentils with Noodles--(a Lebanese dish called "Rishta b'Adas")
 
We just had this for supper a few nights ago. Sounds bland, but is delicious!
 
1/2 cup lentils
1 cup uncooked egg noodles
1 large onion, sliced
2 Tbs olive or canola oil
Salt
Water
 
Cook lentils in a large pot of salted water. After about 10 minutes or when the lentils are just starting to get soft, add the noodles. You should have plenty of water so things boil loosely and freely. When lentils/noodles are done, drain the water (if water is scarce, save it for soup stock for some other meal).
 
Meanwhile (or earlier, because this takes a while), cook the sliced onion in the oil on medium heat, stirring frequently, until it is all dark brown and caramelized. Mix into lentil/noodle dish, taste and add salt if necessary, and serve.
 
If you have tomatoes, they are delicious chopped up and mixed into this.
 
 
For other lentil/legume ideas, check out Middle Eastern/Indian cookbooks. Middle Eastern food is really delicious and if you don't like spicy hot food, it's the way to go--it has tons of flavor without being spicy hot or requring too many hard-to-find spices.  Lebanese food is particularly delicious.

There is nothing better than DAHL... or Indian Lentil Curry.  Find a good recipe.  Here's mine:
1 Large onion diced
1/2 head of garlic peeled and crushed
4 T cooking oil . Saute the above in medium sized pot
after tender reduce heat and add :
3T corriander
1T cumin
1t red pepper powder
1/2 t tumeric powder
2t salt (to taste)
contine sauteing to bring out the flavors of the spices.. then add
6 cups water (after I add the water I adjust saltiness)
2 cups red lentils (dahl)
cover and simmer  till soft and mushy (check on it occasionally to see if more water is needed... reduce heat !..nothing smells worse than burnt dahl. After cooked add:
1 or 2 cans of diced tomatos (I like petite) and a Tablespoon of lemon    juice  if you have it.
chopped fresh cilantro leaves (if you have them)
serve with a dollop of sour cream (if you have any) and over rice (if you want to)
 
My mother-in-law was embarrassed to serve this to me when my ex and I dropped in one time without calling.  She felt it was "poor peoploe food" and not really fit to serve guests.  Boy was she wrong.  I't's still my favorite and is so inexpensive.  I must have 60# of dahl (red) in my pandemic supplies (and of course lots of spices!).  I did much of my stocking up at the local Indian dry goods store because it is so inexpensive (like Cream of Wheat at .60 a pound).  If you want to do yourself a big favor and really stretch your dollar, buy a good Indian cook book. White beans and ham soup is good
Refried beans with pintos
Taco soup (use a mixture of beans, a can of corn, and some taco seasoning)
Chilli (of course)
Cajun Beans and Rice
You can also use beans as meat fillers in most dishes as they will absorb the flavor of whatever they're cooked with.

When you have beans and rice together in a meal, you have created a "whole protein" meal. That's why it's probably the first thing suggested as storage food. Dried beans and rice are easy to store and easy to cook once you've tried it and see how long to plan for.



Simple explanation:

"Different Kinds of Protein
Protein from animal sources, such as meat and milk, is called complete, because it contains all nine of the essential amino acids. Most vegetable protein is considered incomplete because it lacks one or more of the essential amino acids. This can be a concern for someone who doesn't eat meat or milk products. But people who eat a vegetarian diet can still get all their essential amino acids by eating a wide variety of protein-rich vegetable foods.

For instance, you can't get all the amino acids you need from peanuts alone, but if you have peanuts or peanut butter on whole-grain bread you're set. Likewise, red beans won't give you everything you need, but red beans and rice will do the trick. The good news is that you don't have to eat all the essential amino acids in every meal. As long as you have a variety of protein sources throughout the day, your body will grab what it needs from each meal."

You can cook beans and pressure can them to make it quicker, but not the rice. It should be added to the meal as it's cooking, or cooked separately.

I like to add beans to my salads like pasta salad and green salad. I also have a recipe for bean salad:
1 can garbonzo beans
1 can kidney beans
1/2 cup red onions (or to taste)
1/4 cup diced dill pickles
parsley
pepper
1/2 cup mayonnaose. It is really good and I usually have this stuff on hand. Good luck!

We do beans and cornbread for a meal occasionally. I also make chili with beans (kidney and pinto) add some ground beef and chili seasoning. We also use pinto beans on Indian Tacos when we make those.
