I came across tortilla mix in an air tight bag the other day. I bought 6 bags for $1.60 each. Maybe this would be a good alternative to making bread. With this mix all you do is add hot water and then roll into balls and then roll flat and cook on a skillet for about 20 seconds. It seems that this would be easier than baking bread.

I have two 5 gallon buckets full of corn masa instant mix (about 50lbs) in my preps, a cast iron tortilla press and a comal so I can make tortillas. We eat a lot of burritos, so I have canned refried beans and black beans, and dry packaged spanish rice stored too. I also snag handfuls of condiments every time we eat out. Those little packs of ketchup and salsa have a long shelf life and you only use what you need at the time, instead of opening a jar or bottle and watching it spoil without refrigeration.

jacksdad where did you find this masa instant mix? I have been looking at Masa in the store and it is not too expensive but a mix would be better.
Do you know how long this mix will last? |

I bought mine at Smart and Final. You'd probably find it at restaurant supply stores. I think I paid less than $15 for 25lbs (but I'm sure that's gone up now). I can't find a specific reference to this product, but flour and cornmeal keep for at least 5 years if you store them properly, though I've seen mention of much longer safe storage times if it's done right.

Good thinking on the tortillas.
Does anybody know how to keep instant mixes from going bad. I had a bunch of instant pancake mix that would not rise afters storing for about a year at room temp. I think the baking soda in it fizzelled out, but it could have been with the milk or egg ingrediants.

How was it stored? If it was in a sealed palstic bag it's not completely airtight and dry foods can degrade when oxygen gets in. For bulk items, go the mylar bag route.

One recipe I have put aside is for Matzah or unleavened bread - we use it for passover!! They are like large crackers..
