One of our members has a child with an allergy to wheat, so I thought we could all put our heads together and come up with some ideas for her. My brother-in-law is also severly allergic, so I made crepes for him for Easter Brunch. Super easy! Instructions and recipe:
www.cs.wisc.edu/~roy/Crepes/MakingCrepes.html , just replaced the flour with oatmeal flour, which I ground from some oatmeal which wasn't that fresh anymore. Filled it with the Lemon Curd recipe which KatDoe67 had posted. Yummy!!!!!!!!! (Actually replaced the sugar with Splenda since we have 3 diabetics in the family).

I saw this post didn't have any responses yet, so I thought I'd mention that I have the book "Allergy Cooking with Ease - the no wheat, milk, eggs, corn, soy, yeast, sugar, grain and gluten ccokbook" by Nicolette M Dumke. We do eat all the things above, but one of my sons has allergies (including peanut), and it is nice to have a source to make him and others something if you have to.
I was going to list a recipe from the book, but there are just too many (ranging from breads and pasta, vegetables and salads, to cookies, cakes and sauces). If there is a special request, let me know and I'll look it up in the book and post it.
I'm sure a Google search for wheat free recipes would give many results as well.
