I just opened my canned butter 5 months old...It has a orangey powder in it and it smells funky. Something wasn't right.
I was scared and tasted it..Wasn't sure what to think...It tasted bad...
So I opened two more jars...They smelled like butter no problem..
The texture is slightly different but it's taste like butter.
I can tell you with any canning occasionally your going to get a bad jar.
This will not stop me from canning more butter...

I am happy to hear that, HC. Jazzy (on canning thread) was nice enough to give me her water-bath butter recipe so I feel better about giving it for Christmas presents--I am not worried about the batch I have already made as we are on our third jar already!! We love the stuff and thanks for the recipe again.!

I've jarred the butter once -- looks soooo pretty!! Decided to open one about 3 weeks later just to test it. While it tasted ok, it did have sort of a grainy texture to it (not the creamy smooth consistency it started with). Is this how it's supposed to be? In the absence of the real stuff, surely we'll adjust to it. Just want to be sure I did it right and won't kill anyone!! -- Can anyone tell me?

It is a different texture then the butter you start with. I personally love the taste and have it on my muffin every day.Did you pressure can it or did you do it the way Happy Camper did hers? I have done it both ways but feel more comfortable pressure canning it.

Hi Hotair - Just saw your post -- thanks! I didn't do either. I just sterilized the jars in the dishwasher and then again by boiling them & poured the melted butter in and put them in the oven at 250 (I think) until I heard them pop. Don't have a pressure canner - do you think I should get one? So far, this is all I've had the courage for but I know I'd like to try doing the hamburger rocks. Life is not worth living without hamburger around here
